Gluten Free guacamole and home made corn chips – I went to a party a while back and one of the ladies had bought the most amazing guacamole dip I’d ever tasted. I was so shocked to hear how simple it was to make so now I’ve adapted it a little and I make it all the time. Thanks Nicci for inviting my taste buds on this magical taste adventure.
I had a real hankering for Mexican last night and had my Mum and Step Dad coming over for dinner, so this dip and home made corn chips was the starter followed by tacos. You can’t beat tacos, even if it wasn’t a Tuesday!
This dip is so quick and easy to whip up and tastes amazing! Why by store bought dips when you can eat ones like this for a fraction of the cost, plus its better for you. Winning! The corn chips are probably not so healthy but you know what, that’s ok.
1 Pkt gluten free corn tortillas
Oil of choice for shallow fry (I used canola)
Note: You can keep the cooked tortillas in an air tight container if you don’e eat them all in one go. I’ve never had to store them though because they’re so yummy they usually don’t last.
I can hook you up with Tupperware which really is the best air tight container.
2-3 ripe hass avocados
2 generous tablespoons of salsa (whichever heat you like)
1 generous tablespoon of sour cream
Salt and pepper to taste
It’s that simple!!
