My beautiful friend, Kim, called me and asked me to come up with something for her nearly one year old to eat.

This was the brief:
– must include protein
– finger food
– baby friendly (nothing too hard to chew)
– will freeze well
– budget friendly
– family friendly

This Mumma was concerned that baby wasn’t get enough nutrition because she only wanted finger foods like grated cheese, fruit and pasta and was drinking less and less of her bottle at feeds.

I invited them over for a play date and assured this Mumma that I’d give it a red hot crack at fulfilling her request.

Lots of ideas went through my head like veggie pasta, polenta fingers and spinach scrolls. I landed on mini quiches and then my ideas bank went crazy!! It’s a great way to introduce new flavours and textures, can be easily held in baby’s hand and packs a punch with nutrition and taste.

So I got to work… These guys are so easy to make and like most things I cook, can include a variety of hidden veggies.

Makes: 12 large and 24 mini quiches
Prep time: 10 minutes
Cook time: 25 minutes

Ingredients:
18 eggs (yes, 18)
3/4 cup milk or cream
Salt and pepper to taste
Grated cheese

Fillings:
Chopped ham or bacon
Corn
Brocolli
Grated zucchini
Sun dried tomato
Feta
Olives
Diced mushroom
Spinach
Ricotta
Shredded chicken
Celery
Spring onion

Method:
1. Preheat oven to 190°C
2. Add any combination of ingredients in the bottom of a muffin tray
3. Fill with egg mixture
4. Sprinkle grated cheese
5. Bake for approx 25 minutes or until egg is cooked and golden brown.
6. Serve warm or cold

To freeze: allow to cool completely and put in an airtight container. Freeze for up to 3 months.
