MUMMA’S GLUTEN FREE CLUB SANDWICH

If you are looking for an interesting lunch idea that everyone, including the kids, will love then look no further! This classic  never goes out of fashion. With its delicious layers of juicy chicken, crispy bacon, crunchy lettuce and tomato, fresh avocado and creamy mayonnaise, there’s everything to love!

Now that we have a great selection of Gluten Free bread available to us that no longer taste like a dried newspaper, it has become fun to recreate some of my “before diagnosis” favourites…..The Gluten Free Mumma style.

This is a really simple recipe to make for any time of day or night.

Chunky Crunchy Hand Cut Chips

Serves 4

YOU WILL NEED

  • 2 cooked chicken breasts, sliced (see note)
  • 2 middle rashers bacon cut into thirds and pan-fried, rind removed
  • 1 tomato, thinly sliced (8 slices)
  • 1 cup shredded lettuce
  • 4 slices cheese – I use swiss
  • 1/2 half rip avocado
  • whole egg mayo
  • 12 slices gluten free bread, toasted

Note: the chicken works best if it is steamed. I use my Tupperware steamer and it comes out perfectly. I’m also a Tupperware lady for those that don’t know, so happy to help you out if you want one.

TO ASSEMBLE

  1. start with 1 piece of toast
  2. spread with mayo
  3. add tomato then lettuce
  4. add the second piece of toast
  5. spread 1/4 of the avocado
  6. add bacon
  7. add sliced chicken
  8. add sliced cheese
  9. finish with the final piece of toast

TO SERVE

  • Cut into quarters and serve with hand cut chunky chips. Find the recipe here
