Mumma’s zucchini Slice


This is a family favourite that my Aunty always used to make for family gatherings….. I reckon it’s why we always had such a great turn out at them 😉

We are headed out to somewhere really cold in the caravan this weekend so I’m taking some comfort food to warm our hearts… Naww. This slice is a great way to use up veggies or sneak them in to something the kids will actually eat. It’s also really adaptable and quantities can change depending on taste.

This slice freezes perfectly so it’s great to do up a big batch and freeze individual portions for school/work lunches, easy dinners or, like I do, a late night snack.

So here it is – Mamma’s Easy Gluten Free Zucchini Slice!

1-2 medium zucchini grated
1 cup cheese grated
1 onion chopped
1 sml can corn kernels
(I always use fresh corn because I always have it in the fridge but frozen corn would also work)
1 cup diced bacon
5 eggs
1 cup gluten free self raising flour sifted
1/4 cup oil (I used veg)

**optional extras**-
– diced mushroom
– Grated carrot
– chopped spinach

– preheat oven to 180 degrees
– mix all ingredients
– cook approx 30 mins or until golden on top

Yummy yummy get in my gluten free tummy!!!
