These tasty little morsels can be made so that they are quite healthy and nutritious with the vegetables, compared to the store bought variety. You could decrease the saturated fat by mincing your own meat and omitting the grated cheese.

These little guys also freeze really well, either cooked or uncooked. I find myself making a huge batch of pork rolls and the spinach rolls and freeze them for an easy nutritious snack. I put them in the oven frozen and just increase the cooking time by about 5 or 10 minutes.

They are so versatile because you can add and omit any vegetables you like and they are delicious either hot or cold so they make the perfect lunch box snack.

Be careful, they are extremely addictive and you will find yourself eating more than just one.

Ingredients

Instructions
  1. 1. Preheat oven to 180°C / 350°F
  2. 2. Defrost puff pastry by leaving it at room temperature for approx. 20 minutes.
  3. 3. Add vegetables, pork. cheese and egg in a bowl and mix until all ingredients are combined. Season to taste.
  4. 4. Cut puff pastry into 2 sections.
  5. 5. Add meat mixture to pastry leaving a 2cm edge.
  6. 6. Fold pastry over and seal edges by pressing down with a fork or gently pressing down pastry edge with your finger.
  7. 7. Place on a baking tray lined with baking paper seam side down.
  8. 8. Brush pastry with egg wash.
  9. 9. Bake for 25 minutes or until golden and flakey.
